This recipe comes with a warning: Of all of the sweets and treats with which I’ve rewarded myself throughout my weight loss journey, this is the only one that is so good that I can’t resist eating them if they’re in the house.
With that being said, though, they’re only 38 calories each, so it’s a good choice to struggle with.
The original recipe came from my friend Christen, who got it from her sister, who got it from someone else, and so on and so forth. I’ve tweaked it a bit to make a bigger batch (because I need that many more around the house and all), and to make them a little softer, so here’s my modified recipe:
2 sticks of butter, softened
2 pounds powdered sugar (7 1/2 cups)
1 tablespoon milk
1/2 teaspoon of peppermint extract
1. I usually forget to leave my butter out beforehand, so I greatly soften it in the microwave on 50% power. Cream butter well; then blend in powdered sugar in small increments.
2. Add milk and peppermint extract, blend until smooth. (It will resemble a thick dough. If powdery instead of thick, add a little more milk.)
3. Roll into small balls (1/2 – 1 teaspoon sized), place on wax paper, then press down with a fork.
4. Keep refrigerated. They can be served at room temperature (softer) or chilled.
You can also add food coloring, which makes them perfect for baby showers or teas:
The smooth texture and pleasurably dissolving creaminess of these mints is absolutely PHENOMENAL. I promise – if you make them once, you will find yourself craving them continuously.
